What you need

6 passion fruit

½ tsp fine sea salt

2 oz vegan margarine

8 oz all purpose flour
1 tsp baking powder

1 tsp baking soda
Instructions
Grease two cookie sheets with parchment paper and preheat oven to 350F/180C. Use a handheld mixer or stand mixer, whisk the vegan butter with the powder sugar until smooth. Add the passion fruit pulp and whisk until combined. In a separate bowl, mix the flour, baking soda, and baking powder and sea salt until well combined. Pour the wet ingredients to the flour mixture and combine to a smooth batter. If the dough is too sticky, add a little more flour, if too dry add a tablespoon of vegan milk. Use an ice cream scooper and scoop batter out and roll it into a ball using your hands, then roll it in the extra powder sugar, set aside. Continue with the remaining dough. Let the cookies set for a few minutes and roll again into the powder sugar and place them into the cookie sheet. Bake for 12 minutes, take out and leave completely to cool.
